Ice-cream and Cookies

I had sudden inspiration, and a sudden craving for ice-cream the other day. Since I can't have dairy, and since I can't have sugar you can see the complications that arose while making this. But, in the end, it turned out splendidly--and on the first try too! I was really happy. :D

I used maple syrup in place of sugar, and coconut milk in place of dairy. They are surpirsingly easy to work with. I put eggs in like it was regular ice-cream.

And then--today--I made these cookies. They were supposed to be oreos ( I made filling for them and everything) but they turned out better just all by themselves. I have yet to invent a suitable oreo filling, so I'll hold off on the topping cookies part for now. :D

But, all in all, both of my completely spontaneous and made up recipes worked! It was fun. I used to not really like cooking or baking, but my appretiation for it grows daily. :)
